Banana Cake with Butter

What do you do when Banana’s get all mushy.. I make Banana Cake! Pin this. Then go make it, you will be glad you did!

Sarah’s Banana Cake ( She is my Friend, who made up this recipe)

1/2 Cup Oil or 1/2 Cup Butter ( Banana cake with butter is best )
2 eggs
1 cup Milk
1 cup Bananas (ripe)
1 teaspoon vanilla
1 1/2 cup of sugar
2 cups of flour
1 teaspoon of soda
1/2 teaspoon of salt

Mix together in mixer, I use my Kitchen Aid, because I love it. Pour in greased cake pan, cook for 45 minutes on 350 degrees.

I have made this recipe by increasing the bananas, and decreasing the amount of sugar and oil or butter. You can use Butter milk instead of milk too. There is just a lot of diversity going on with this Banana cake made with butter.

Tip. If you have bananas that are going bad, peel them and then put them in a container or baggie and freeze them to use later.

You may ice the cake if you would  like, with cream cheese frosting, but I never do. Cake is normally gone super quick like. But just sayin’ you can.

Here are a few of my easy favorites.

Lil’ Smokies

Crock Pot
Lil’Smokies
BBQ Sauce
3 tablespoons or so Grape Jelly

Mix in crockpot, and serve when hot. Can also be done on stove top, if Crockpot is unavailable.

Layered Dip

Layer Items in Order in a small cassarole dish.

Cream Cheese, Can use less fat
Black Beans, Drained and rinsed. (must drain well)
Rotel (Drain well)
Cheddar Cheese

Heat in oven 350 for about 20 minutes or heat in microwave until cheese is melted.
Eat with Tostitos, we like the Scoop ones.

The Velvetta Cheese Dip

I like to use 1 pound of velvetta (print coupon from my side bar coupon list for $1 off), I can of rotel, not drained. Cook in microwave until melted.

Can add sausage to cheese dip to make the dip extra special.

You can make all these dips for under $20 and they should feed an army of people. Ask your friends to bring the chips, and you can provide the dips!

Also, when hosting a party, don’t be afraid to let people help out! If your guests ask if they can bring anything, let them do so!

Mexican Casserole Recipe

Cooked Chicken Shredded ( you can season it if you would like, or use whole Chicken Breast)
1 Cup of Rice
1 Can of Cream of Chicken
1 Can of corn
I cup of Salsa, my salsa had black beans in it (more if you would like)
1 can of Black beans if you would like (optional)
1 cup of Cheddar Cheese

This is what I did, I cooked Rice per package instructions. Then I mixed Cream of Chicken, Salsa, corn and then the chicken. I put in a casserole dish, topped with cheese. I then baked for 350 degrees for 2o minutes. (or until bubbly)

Note: One of my sons, topped with jalapenos and more salsa. We served with chips. He said I should have added green peppers. Then I thought, maybe next time I should make stuffed bell peppers with this mixture. He gave the dinner a 6 out of 10.

Next Son, thought it was great as made, gave it more like an 8.

Youngest, super picky eater (5 yo) well he ate it and thought it was pretty good! Gave it no rating.

Last week I mentioned this recipe on twitter and several people were asking for it so here it goes… it is SO SO SIMPLE TO MAKE!!

1 bag Ore-Ida brand Tator Tots

(I have tried several different brands, ya know the “cheapest” or the “on sale” or “free with coupon” but honestly NONE work better than Ore-Ida because they stay crispy and dont fall apart and turn into hasbrown casserole….

1 can Campbells Cream of Mushroom Soup (brand doesnt matter but the campbells gives a better flavor)

1 bag Shredded Cheddar Cheese

Preheat oven at 350 degrees. While oven is heating take frozen Ore-Ida  Tator Tots and mix in bowl with the Cream of Mush soup.  Coat cake pan with cooking spray and put in tator tot- soup mixture. Bake at 350 for 20 mins remove from ovem and sprinkle cheddar cheese, you can use as much or as little as you want…my family likes it cheesy so I use the entire bag. Put back in oven for 10 mins or until cheese is melted.

Thats it! See I told you it was soo soo simple!!    hope your family enjoys as much as mine does… I will Post Pic’s When I make this dish again.

Ingredients

Bunch of Broccoli
Creamy Poppy Seed Dressing
1/4 cup or to taste Red Onion
1/4 cup or to taste Golden Raisins
1/4 cup or to taste Dried Cranberries

Directions: Chop broccoli, chop red onion, add raisins, cranberries and mix in Poppy Seed Dressing to coat and to taste (I used Kraft)
Refrigerate for a few hours or overnight before serving.
Optional: Add walnuts, pecans or sunflower seeds
