What do you do with all the cucumbers? Answer: you have in your garden you microwave cucumbers to pickles? You make simple Bread and Butter pickles in the microwave in under 20 minutes. My mother told me of this recipe, and idea a few weeks ago when we were discussing what to do with all the cucumbers from the garden.

Simple Recipe for Microwave Pickles

3 Large cucumbers
1 teaspoon salt
1 white onion thinly sliced
1/2 teaspoon mustard seeds or powdered Mustard
1 cup white sugar
1 cup distilled white vinegar
1/4 teaspoon celery seed or celery salt
1/4 teaspoon ground turmeric

Glass microwavable bowl, place all ingredients in bowl. Slice cucumbers to desired thickness, leave the skin on! Stir all ingredients in the large bowl, to make your microwave pickles. These will be a bread and butter variety of pickles. You don’t even have to can these pickles. Cook on high for 8 minutes for in the microwave, stir occasionally. After heated, poor pickles in jars or a plastic container, and cool in refrigerator. These will be gone in no time. This is super easy to do as well, and can be made ahead of time or even about 1 hour before wanting to serve to your family or friends.

You can use a recycled jar, mason jar, or just a plastic container. These need to be refrigerated after you make the microwave pickles. If you can, you can do this with this recipe, just follow the sealing recommendations and canning procedure to get a good seal.
