You know… I would never think to buy egg beaters. I mean why would you do that when you can buy the eggs individual right. So I was out shopping and they had a big container of Egg Beaters for .99, needed to be used right away.
So this is what I made.
I took a round skillet, sprayed with PAM. Then I shook up the egg mixture, and poured about 1 cup in the skillet, added a little salt and pepper and cooked until the sides lifted.
I then put shredded cheese in the middle, folded over and cooked a few seconds longer. This made a wonderful omelet for my boys breakfast before school!
